Healthy Oatmeal Raisin Cookies

Today we are making awfully healthy oatmeal raisin cookies!
stirring up the almost non-existent butter and whole wheat flour batch

placing it on a pizza pan since I have no cookie trays...

Ta-da! They do taste pretty good even without too much sugar and butter (the raisin and cinnamon masks everything), but I do want them to be a little harder. These are too chewy. Any tips?

S'mores!

I went to target yesterday and they had a s'mores section which I just couldn't pass, so look what our late night snack was:

Building the campfire was actually easier than we thought...put the oven on broil and put it in for 30 seconds...you need to peer into the oven and make sure that the marshmallows don't burn. The above color is just about right, or maybe a little over-done. Good Luck!

It was pizza night (again) and I couldn't decide which pizza I wanted, so I made both!

Gorgonzola Pizza Recipe

Ingredients:
Pizza Dough (search for my recipe in my older posts)
Mozarella Cheese
Gorgonzola Cheese
Olive Oil
Garlic
Honey

Press the dough out very thinly-the thinner the better.

Spread olive oil and garlic.

Spread gorgonzola and then mozzarella cheese evenly.
Preheat oven to 400 degrees and bake for about 15 minutes.

Dip in honey and eat!

very easy and very delicious! This is not the usual pizza, so you're not going to be able to eat more than 2-3 pieces, and it will not fill you up. So think of it as an appetizer or a dessert pizza. And don't forget to dip it in honey!

Onion Rings

This is one of my favorite recipes, and the onion rings are very crunchy and fresh and best of all, delicious!

The picture doesn't make the onion ring *shine* like it should, but trust me, it tastes like heaven minus the cholesterol.

Ingredients:

-onions
1 cup   flour
1 T      baking soda
1 t       salt
1         egg
1 c      milk
1 c      breadcrumb
2 c      oil

1. mix the flour, baking soda and salt, and then add the egg and milk and whisk away....
2. In a seperate bowl, prepare the breadcrumb ( I usually grind my left over bread).
3. When the oil is ready, dip the onion in #1 and #2, and fry until golden brown.
4. Eat with ketchup!

Teriyaki

We had a couple of teriyaki dishes recently and really enjoyed it, so I decided to make one at home. Well, this is actually the 2nd time, so it turned out much better, and I had made a critical mistake my 1st time, so that explains a lot. To make the teriyaki sauce, it is important that you simmer it for a couple of minutes before you use it.

Ingredients:
1/2 cup  soy sauce
1/2 cup          mirin
1 tablespoon sugar
1 teaspoon   honey

So you mix the ingredients above in a little saucepan and simmer it (which I did not do the first time), and then refrigerate it until you need to use it. Marinate the chicken or beef with this sauce and stir fry until its done! Very easy.

The veggies turned out to taste the same, but the chicken was juicier than the ones we had before. I think you're suppose to stir fry it until the edges burn...I'll give it a try next time.

Benihana's ginger dipping sauce recipe

Ingredients:

1/2 teaspoon     ginger
1/4 cup               onion
1/2 cup               soy sauce
1/4 cup               vinegar
2 teaspoons       lemon juice
dash of                pepper

mix the ingredients and grind in grinder.

Easy Basil Pesto Pasta Recipe


Ingredients:

1 cup basil pesto
2 cups macaroni or pasta of your choice
1/2 cup bacon bits

mix... soooo easy right?

for the basil pesto recipe:

1 cup fresh basil
1/2 cup grated Parmesan cheese
1/2 cup olive oil
2 garlic cloves, minced
dash of ground black pepper

you can also use pine nuts, but I personally don't like the taste of it so I'll pass.

pulse the mixture in a food processor until it looks like pesto!

Oahu Shrimp Truck Recipe

Who has been to Giovanni's Shrimp Truck? Well if you haven't, try this recipe...I think it's almost better than the original one!

Ingredients:

Serves 2

about 30 deveined, unpeeled, big, chunky, fresh shrimp
10 cloves garlic, minced and chopped (somewhere in the middle)
1/4 cup melted butter
1/3 cup white wine
1 cup flour
1 teaspoon cayenne pepper
1 tablespoon paprika

1. mix the flour, cayenne, paprika in a bowl and coat the shrimp thouroughly
2. in a pan, saute garlic in butter until golden, and fry the shrimp for about 3 mins on both sides
3. once the shrimp looks ready pour the wine and cook for another 1 min
4. serve the shrimp with 2 scoops of rice and a lemon wedge!
